The Living Lunch Box

What do you get when two beautiful minds who are passionate about sharing their love for healthy food and healthy living come together? The Living Lunchbox!

Every Tuesday, Nicole and Tyler (the founders) prepare and deliver high quality, fresh, organic, nutritious and deliscious lunches to workplaces all across Sydney. 


So how does it work? If you head to their website www.thelivinglunchbox.com you can sign up to receive their weekly menu via email. You will then have until 5pm on Monday to round up those who will be ordering their beautiful lunches at your workplace/office. Once you're ready you can proceed to order through their extremely user friendly website (see above). There is a $50 minimum per delivery destination. 


Today I was in Bondi so I was able to finally test out 'the living lunch box' and let me tell you it was worth every moment of the wait! Nicole and Tyler aim to provide food that is nourishing for the body, mind and soul which they have certainly achieved. I now have one of the many happy tummys across Sydney this Tuesday! Thankyou 'Living Lunch Box' for my beautiful lunch :)

Fruity fruity bowl!


What better way to enjoy the weather warming up than by enjoying all of the gorgeous summer fruits which are coming into season? Hollow out a small rockmelon or watermelon and fill it with this seasons fresh strawberries, bananas, apples, melons and oranges! Enjoy a fresh fruit salad with no washing up! That's a win win situation in my eyes ;)

Tip- to keep fruit salads fresh throughout the day or for longer periods of time squeeze some fresh orange juice over the top!

Deliscious Summer Smoothie


Do you find that in summer you start craving beautiful fresh, light and chilled fruits instead of those heavy (and slightly naughty) winter comfort foods? If you're like me and you have a bit of a sweet tooth then this smoothie is perfect for you! It is full to the brim of antioxidants and all the vitamins and minerals that Mother Nature has to offer..

What you'll need-

- 150g strawberries
- 50g frozen mixed berries
- 1 small carton of coconut water (I've      used H2coco)
- 300g of watermelon
- 2 teaspoons of BodySciece imureds antioxidants
- 1 teaspoon of chia seeds
- a handful of fresh mint leaves

Smoothies are so quick and easy, all you then need to do is blend!

If it's a warm day I suggest adding some ice cubes to your smoothie to keep it beautiful and cool. As you're drinking it imagine all of those amazing antioxidants entering your body and doing wonders for you.

Zucchini and Fetta cous-cous salad



Warm or cold this is one of the easiest yet deliscious recipes there is! You will need,

-1 cup of plain cous cous
-1 punnet of cherry tomatoes
-2 grated zucchinis
-1/3 packet of reduced fat fetta cheese
-1 generous handful of baby spinach
-Shallots 
-1 regular can of chickpeas (drained and washed)
-1 cube of chicken stock

Step 1-
Dissolve the chicken stock in 2 cups of boiling water then pour over the cous cous and leave to sit for 5 minutes

Step 2-
Grate zucchini, 1/4 the tomatoes, thinly chop shallots, finely chop the baby spinach, drain and wash the chickpeas

Step 3-
Add all ingredients together and mix through thoroughly! Crush the fetta over the top and your done!

Fried Rice - The healthy way.

 
INGREDIENTS -
 
- 1 cup brown rice
- 100g turkey mine
- Finely chopped capsicum, shallots, mushroom, broccoli
- 1 whole egg and 1 egg white
- organic coconut oil
- teaspoon of low salt soy sauce
 
 
Cook turkey mince through thoroughly on a warm pan breaking it up. Once cooked add pre- prepared brown rice and finely chopped vegetables to a hot pan with a dash of coconut oil. Stir through until you are satisfied with how cooked your veges are. Once happy, crack the eggs over the top of pan and stir through aswell along with the teaspoon of reduced salt soy sauce.
 
So simple but i'm sure you'll love it!

Easy Peasy Perfect Pancakes

Are you ready for it!? Absolutely fool proof pancakes coming your way! I can't believe how simple yet AWESOME these babies taste so here is what you will need.

- 1/2 banana
- 1/2 cup of oats
- 1 whole egg and 2 egg whites
- coconut oil for the pan
- whatever ingredients you would like to top your pancakes with! I suggest any fruits or berries :)

The next step is simple! Blend the oats, eggs and banana together until you have a smooth pancake batter. This will make around 3 pancakes! Make sure that your pan is already heated before you pour the mix onto it. When you see the bubbles forming in the mixture you will know its time to flip it over!

As a sauce, I like to mix a scoop of my favourite flavoured protein powder with a small dash of water. When you mix it, it should be like a thick sauce. It tastes great drizzled over the pancakes.
